Tokoroten is a dish in Japanese cuisine made from kanten (jelly extracted from seaweeds such as tengusa (Gelidiaceae) and ogonori (Gracilaria) by boiling). Pressed against a device, jelly is shaped into noodles. Unlike gelatin desserts, tokoroten has a firmer texture.
